Individual Nutella Cheesecakes


I am a big fan of Nutella. Especially when it is mixed with cream cheese. I am almost certain there isn't anything better.
We stayed in for Valentine's Day this year (and last) and my husband actually brought home chicken wings...pretty romantic, right? While I was a little surprised at his decision to bring wings for V-day, it actually was quite tasty and sums up us pretty well!
I told him I would make us some dessert if he would be in charge of dinner.
I wanted something easy and quick.
I turned to Pinterest of course to help me out!

Here is what you'll need:

For the Crust
-12 Oreo Cookies, crushed into crumbs
-3 tablespoons unsalted butter, melted

For the Filling
-1 (8 ounce) package cream cheese, softened
-2/3 cup Nutella
-1 teaspoon pure vanilla extract
-1 (8 ounce) tub frozen whipped topping, thawed

For the Garnish
-whipped topping, optional
-mini chocolate chips

Preparation:

1. In a medium bowl, stir together the Oreo cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.

2. In a large bowl, with an electric mixer, beat the cream cheese and Nutella until smooth. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well blended and no streaks remain.

3. Evenly pipe or spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.

4. Add your toppings of choice.

How good do those look?

Happy Valentine's Day

Happy Valentine's Day from my husband and me :)

We are not avid Valentine's Day folks, but we do celebrate it and acknowledge it. Why not? Yeah we should celebrate love every day and we do! But why not celebrate it on Valentine's Day too?

My husband said he is bringing dinner home...my friend Melanie predicts chicken wings haha. I would be down with that!
I am making a special dessert and will post about it later :)

Valentine's Day Wreath

I am really starting to love the more simple decorations. I think living in this small condo has taught me that less is more. I admit that I love "stuff" being on the walls and on the tables. I have been hesitant to hang stuff on the walls here because I know any hole I make will have to be filled before we move.
With all that said, here is a really simple and easy Valentine's Day wreath I made for the door.
I used a vine wreath I already had and bought red and pink scrapbook paper at Michael's.
I cut the paper in to hearts using this technique:
This is the easiest way to get almost perfect hearts.

It is simple and perfect for the statement I wanted to make.

Simple Valentine's Day "Mantle"

Like I have said in past posts, we do not have a mantle above our fireplace.
There is a tiny ledge above the fireplace that you can set something on, but not much. Plus the whole wall that the fireplace is on is brick...so it makes it really challenging to do much at all with it.

I wanted to decorate the "mantle" for each holiday and the next one coming up is Valentine's Day!
I say I am not a big Valentine's Day person, but I still like to celebrate it with my love :)

I have to do simple decor on the "mantle," but I like it simple.
I am really loving bunting these days....

I bought red, pink, and white scrapbook paper and cut triangles out of it. Then I used straight pins (the ones with the colorful balls on the end) and used them to put the paper on the ribbon.
Easy and cost less than $3 to make!
Plus I already had the "love" sign.

Later I will post about the simple Valentine's Day wreath I made to go on the front door!
