I love potatoes. I am referring to the white, starchy ones. But, we all know those aren't the best things ever for you. I do like sweet potatoes, just not near as much.
We had hamburger patties (no buns!) this last week with avocado on top and what I really wanted were some nice, crispy french fries...but instead we had baked sweet potatoes.
They were really good!
Here is what you'll need:
-3 large sweet potatoes
-2 tablespoons olive oil
-pinch of salt
-pepper
-pinch of oregano
Preparation:
Preheat your oven to 350. Peel and cut the potatoes into cubes. Pour the olive oil into a casserole dish and then put the sweet potatoes in making sure to coat them in the olive oil. Season with the seasonings and then bake for an hour or so...until the potatoes are soft.
Season more if need be.
Try these instead of your regular baked or fried potatoes next time.
