One of my husband's favorite sides that I made is sauteed zucchini and squash.
It is so easy and cheap, but also healthy and filling.
Here is what you'll need:
Plus onion, garlic, salt and pepper.
Slice the zucchini and squash into thin slices and also slice an onion.
Put some olive oil in a pan and throw the veggies in.
Add salt and pepper and a few cloves of garlic if you want.
Saute on medium high for 15 mins or so.
When you first put the veggies in the pan, it seems like a lot...
But, after a few minutes the vegetables will reduce in size and be just perfect.
Saute until your preferred done-ness. We like them nice and tender and a little brown.
This went great with a London Broil, but would accompany any meat dish.
I could even eat just this alone as a meal. So good!
