Red Velvet Cake Balls

Before I get to the post about the delicious Red Velvet Cake Balls, I want to make note of something on the right side of my blog. Who doesn't love a cake ball?? They seem to be all the rage these days and I have made them a few times, but they are a bit tedious for my liking so I don't make them often...plus, I try not to keep too many sweets around as my husband and I will devour them before you even knew they were there.

I made around 40-45 of these and took them to my husband's work (he works with ALL men- 10 or so) and there were maybe 12 left when my husband brought the dish home. I was thankful for that because we were going to a Christmas party that night so I took the rest and didn't have to worry about me eating the rest (which I would have).

Here is what you'll need:
-1 box red velvet cake mix (make according to directions on box for the 9x13 size)
-1 16oz. container of cream cheese frosting
-1 package of melting chocolate bark (I used the white almond bark)

Preparation:
Make the cake according to directions on box. Let it cool completely (this is the hard part-waiting). Once cool, crumble the cake into a bowl and add the cream cheese frosting. It is best to get dirty and use your hands to mix it all. Form into balls and place on wax paper on a cookie sheet. These need to go in the fridge for several hours (or in the freezer for 1-2) to solidify some. The cake balls are much easier to work with if you wait it out. Once the cake balls are at the right consistency, melt the chocolate in the microwave and dip the balls and cover them completely. Put onto the wax paper to dry. I think it is best to melt a little bit of chocolate at a time because once the chocolate cools, it is harder to work with.
I added red sprinkles to the top of mine for fun.

These would be good with any kind of chocolate coating. I want to make strawberry cake balls next time :)
