I love pizza. I could seriously eat it everyday if I had to. This recipe is a really easy one and it has a lot of flavor. We have had it several times due to it's simplicity and quickness, but it tastes like you spent a long time making a gourmet pizza. I love that about a recipe.
We were so hungry that I didn't take the time to take a bunch of pictures, but you will need the following ingredients for this recipe:
-Cooking spray
-1 tablespoon cornmeal
-1 (13.8-ounce) can refrigerated pizza crust dough
-2 tablespoons commercial pesto
-3/4 cup (3 ounces) shredded part-skim mozzarella cheese
-1 (9-ounce) package frozen artichoke hearts, thawed and drained
-1 ounce thinly sliced prosciutto
-2 tablespoons shredded Parmesan cheese
-1 1/2 cups arugula leaves
-1 1/2 tablespoons fresh lemon juice
Simply unroll the pizza dough on a pan that you sprayed with cooking spray and sprinkled with cornmeal. Spread the pesto and mozzarella cheese on top. Bake at 500 degrees for 5 minutes.
In the meantime, put the arugala in a bowl and squeeze the lemon juice on top. Also, chop the artichokes and proscuitto. When you remove the pizza from the oven, Arrange the artichoke and prosciutto on top of the pizza. Sprinkle with parmesan cheese. Return the pizza to the pan for 6 minutes.
When the pizza is done, arrange the arugula on top of the pizza.
